Ingredients:

2 cups chopped cooked beef (not ground)
3 cups chopped cooked potatoes
salt and pepper, to taste
1/2 teaspoon onion seasoning
1/2 cup evaporated milk or cream
fat

Directions:

Combine ingredients. Heat fat in a heavy skillet, add beef and potato mixture and cook over moderate heat until browned on the under side. Fold as an omelet and slip onto a heated platter. Garnish with parsley and serve at once.

Makes 4 servings
