Ingredients:
1 beef tongue, about 4 pounds
water to cover
Directions:
Cover tongue with water, bring to a boil, then reduce heat and simmer
gently for 3 to 4 hours, or until tender. If fresh, add 4 teaspoons
salt to cooking water when meat is about half done. Remove from pan,
remove skin and roots, slice and carve as desired.
Makes 4 servings for each pound of tongue
