Add seasonings and tomatoes and cook, covered, until the meat is tender and the liquid has been reduced, about 2 hours. Add beans, if cooked, and continue to cook for 15 minutes. Adjust seasonings and serve in heated bowls with crisp salted crackers or crisp corn sticks. Makes 5 to 6 servings If dried beans are used, measure 1 cup into a container, cover generously with cold water and allow to soak overnight. Simmer with meat during entire cooking period.
