2 cups any cooked cold meat, grind
1 to 2 tablespoons flour
2 tablespoons butter
1 cup milk
1 egg
salt to taste
celery salt
fine bread crumbs


Make cream sauce of flour, butter and milk. Add seasoning, moisten meat with sauce, form into croquettes. Chill 30 minutes. Roll in flour, dip in beaten egg with 1 tablespoon milk or water, then roll in bread crumbs. Fry in deep hot fat until brown. Drain on unglazed paper. Or brown in quick oven. Serve with tomato sauce.
