Ingredients: 1-1/2 pounds boneless beef chuck, cut in 1 inch cubes Directions: In a Dutch oven brown meat, 1/3 at a time, in hot oil and drain. Return all meat in pan. Add sweet potatoes, undrained tomatoes, onion, green pepper, water, cinnamon, garlic, salt, and pepper. Bake, covered, in 350 degree oven for 1-1/4 hours. Stir in corn and zucchini; bake 45 minutes longer. Add drained peaches to stew; season to taste with salt and pepper. |
