Ingredients: 1 pound beef 1/2 pound pork 2 tablespoons fat 2 cups sliced onion 1 1/2 teaspoons salt 1/2 cup chopped green pepper, if desired 1 tablespoon paprika, more if desired Directions: Melt fat in a heavy skillet or Dutch oven, add chopped onion and cook and stir until the onion is yellowed. Add paprika and blend. Add meat, pepper, salt and about 1/2 cup hot water. Cover closely and cook over low heat until the meat is tender, about 1 1/2 hours. Add a little more water form time to time, as needed, but mixture should not be over-moist. Serve with hot boiled potatoes or rice. Makes 5 to 6 servings (Paprika should add a certain nip to this dish not supplied by other kinds of seasoning. Color should be quite reddish.) |
