2 to 3 cup finely chopped cooked roast beef
1 large onion, minced
2 medium cloves garlic, minced
1 egg
salt and pepper to taste
1 package rigatoni noodles, cooked
1 can tomato soup
2 cans enchilada sauce


Combine first 6 ingredients in bowl; mix well. Stuff cooled rigatoni with mixture. Place in lightly greased casserole. Combine soup and enchilada sauce. Pour over stuffed rigatoni. Bake at 350 degrees for 30 minutes.
