8 ounces tender beef
2 tablespoons soy sauce
1 tablespoon cold water
1/2 tablespoon sherry
2 teaspoons cornstarch
1/2 teaspoon salt
1 tablespoon oil
3 green peppers
1 scallion
3 slices ginger
1/2 teaspoon sugar
1 teaspoon salt
3 tablespoons oil


Shred beef about 1 in length, mix with soy sauce, wine, oil, cornstarch, salt and soak for 1 hour. Clean green pepper, remove seeds and membrane, cut in halves and shred crosswise. Cut scallions and ginger into 1 lengths shred, heat oil in pan, fry beef and stir briskly over high heat about 10 seconds, drain. Heat another 3 tablespoons oil in pan. Stir fry ginger and scallion, then add shredded green pepper, salt, sugar and stir well. Add beef, blend thoroughly and serve.
