Ingredients: 1 pound ground lean Bison Directions: Coat surface of large pan with non-stick cooking spray. Sauté bison for 3 minutes; stirring to crumble. Add onion and garlic, sauté 5 additional minutes. Mix in bell pepper, chili powder, cocoa powder, salt, oregano, cinnamon, cumin, black pepper, allspice and cook 2 minutes. Add tomatoes, tomato sauce, beans, water and chilies. Stir to blend and simmer for 45-60 minutes. Serve with condiments if desired. Shredded cheese, chopped green onion, sliced black olives, sour cream, cooked tortilla strips Preparation time: 30 minutes Cooking time: 45-60 minutes Makes 8 servings |
