1 3/4 cups sifted flour
2 teaspoons baking powder
1/4 teaspoon soda
1/2 teaspoon salt
1/3 cup shortening
2/3 cup sugar
2 eggs, well beaten
1 cup mashed rip bananas (2 or 3)


Sift flour once, add baking powder, soda and salt and sift again. Cream shortening with sugar until the mixture is light and fluffy. Add eggs and beat well. Add flour mixture alternately with banana, a small amount at a time, beating after each addition until smooth. Pour into a well-greased bread pan about 9 by 5 inches and bake in a 350-degree F. oven about 1 hour or until done.


Add 3/4 cup of chopped nuts to batter if desired.
