1 cup sifted flour
3 1/2 teaspoons baking powder
3 tablespoons sugar
1/2 teaspoon salt
3/4 cup milk
1 cup bran cereal
1 egg, beaten
3 tablespoons melted shortening


Sift flour once, measure, add baking powder, sugar and salt and sift again. Add milk to bran and allow it to stand for several minutes, or until softened. Add eggs and blend, then fold in shortening. Add dry ingredients and stir only until flour is moistened. Fill greased muffin pans not more than 2/3 full and bake in a 425-degree F. oven about 18 to 20 minutes, or until done.

Makes about 12 muffins


  1. Add 1/2 cup seedless raisins to batter before baking, if desired.
