2 cups white corn meal
1 1/2 teaspoons salt
1 teaspoon soda
2 cups boiling water
2 cups buttermilk
1 tablespoon drippings, butter or margarine
2 egg yolks, beaten
2 egg whites, stiffly beaten


Sift dry ingredients together, add boiling water and blend. Add the drippings, the beaten egg yolks and buttermilk and blend. Fold in egg whites, lightly, but thoroughly, and bake in a 400-degree F. oven for 40 to 45 minutes, or until set.

Makes 6 servings
