2 tablespoons vegetable shortening
4 tablespoons sugar
1 egg
1 1/3 cups flour (sifted)
3 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon vanilla
1 cup apricots, peaches, or applesauce put through sieve

Topping Ingredients:

1 tablespoon butter (melt over hot water)
1/4 cup flour (sifted)
1/2 cup sugar
2 tablespoons cinnamon
1/2 teaspoon vanilla


Cream together the shortening and sugar, add the egg and beat well. Sift together the dry ingredients and alternately with the milk. Add vanilla. Place in an oiled pan and cover the dough with fruit, adding a few drops of lemon extract to bring out the flavor. Sprinkle on the topping and bake 30 minutes in a 375 degree F. oven.

Topping Directions:

Blend all the ingredients thoroughly and spread over the unbaked dough.
