1 cup sugar
cup oil
2 eggs
1 teaspoon lemon peel, grated
teaspoon orange extract
1- cup flour
2 teaspoons baking powder
teaspoon baking soda
teaspoon salt
1/8 teaspoon nutmeg
1/8 teaspoon ginger
1 cup unpeeled grated zucchini
cup chopped nuts


Beat first 5 ingredients together in bowl. Sift dry ingredients together. Add alternately with zucchini to sugar mixture, beating well after each addition. Stir in nuts. Pour into greased loaf pan. Bake at 375 degrees for 55 to 60 minutes. Cool for 15 minutes before removing from pan.
