Ingredients:

1 cup sifted flour
1 cup yellow corn meal
1/4 cup sugar
1/2 teaspoon salt
3 teaspoons baking powder
1 egg
1 cup milk
1/4 cup soft shortening

Directions:

Sift flour once, measure, add corn meal, sugar, salt and baking powder and sift into a medium size bowl. Add egg, milk and shortening and beat with a rotary beater about one minute. Bake in a greased 8-inch square pan vin a 425-degree F. oven for about 20 minutes, or until done.

This will make 9 servings.

Variations:

  1. Corn Meal Muffins-Fill greased muffin pans 2/3 full of batter and bake in a 425-degree F. oven for 15 to 20 minutes, or until done.
  2. Corn sticks-Grease corn stick pans well, almost fill with batter and bake until done.
