1 to 1 Mexican corn bread mix
1 chopped jalapeno pepper
1 teaspoon jalapeno pepper juice
1 medium can cream style corn
1 to 2 lb. ground beef
1 tablespoon chopped onion
salt and pepper to taste
1 cup grated American cheese


Combine corn bread mix using package directions. Add next three ingredients, mixing well. Brown ground beef, onion, salt and pepper in skillet, stirring until crumbly. Drain pan drippings. Spread half the corn bread batter in 2 quart casserole. Spoon ground beef over top. Sprinkle with cheese. Cover with remaining batter.

Bake at 400 for 45 minutes.
