3 cups sifted flour
3 teaspoons baking powder
2 to 4 tablespoons sugar
1 teaspoon salt
1/3 cup shortening
1 egg, beaten
1 1/4 cups milk


Sift flour once, measure, add baking powder, salt and sugar and sift into a mixing bowl. Add shortening and cut into the mixture until it resembles fine meal. Combine egg and milk and stir into dry ingredients only until moistened, but not until the batter is smooth. Fill greased muffin pans not more than 2/3 full of batter and bake in a 425-degree F. Oven for 15 to 20 minutes, or until done.

Makes 12 medium size muffins
