Ingredients:

2 packages yeast compressed dry granular
1/2 cup lukewarm water
1/4 cup butter or margarine
3/4 cup scalded milk
1/2 cup sugar
1 teaspoon salt
2 eggs, beaten
5 cups sifted flour (about)

Directions:

Soften yeast in lukewarm water. Scald milk, add butter, sugar and salt and cool to lukewarm. Add flour to make a thick batter, then add yeast and eggs and beat well. Add enough flour to make a soft dough that can be kneaded. Turn out onto a lightly floured board and knead until smooth and satiny. Place in a lightly greased bowl, cover and let rise until double in bulk, about 2 hours. When light, punch down and shape as desired. Let rise until double, 1/2 to 3/4 hour, and bake in a 350-degree F. oven for 25 to 30 minutes for coffee cakes, 20 to 25 minutes for rolls.

Makes 2 coffee cakes or 3 dozen rolls
