Ingredients:

3 eggs
1 cup oil
1 cup packed brown sugar
2 cups zucchini
1 teaspoon vanilla
2 cups whole wheat flour
1 cup flour
1 teaspoon baking soda
1 teaspoon salt
teaspoon baking powder
1 tablespoon cinnamon
1 cup chopped nuts

Directions:

Beat eggs in bowl until frothy. Add next 4 ingredients, mixing well. Sift dry ingredients together. Add to egg mixture, beating well. Stir in nuts. Pour into 2 greased loaf pans. Bake at 325 degrees for 1 hour or until loaves test done.

Remove from pans and cool on rack.
