3 eggs
2 teaspoons vanilla
3 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup oil
3 teaspoons cinnamon
cup chopped nuts
teaspoon baking powder
1 cup sugar
2 cups raw zucchini (peeled and blended "may need a small amount of water added to blend")


Mix all ingredients. Pour into 2 greased loaf pans. Bake at 325 for 1 hour or until toothpick tests clean.

Cool 5 minutes. Remove from pans.
