1/4 cup butter or margarine
1/4 cup flour
1 cup milk
1/2 teaspoon salt
dash of pepper
dash of onion seasoning
4 eggs yolks, beaten until thick and lemon colored
4 egg whites, stiffly beaten


Melt butter in a saucepan, and flour and blend. Add milk and cook and stir over moderate heat until the resulting sauce is smooth and very thick. Remove from the heat and set aside. Beat egg yolks until thick and lemon colored, then add to the thick sauce, mixing well. Beat egg whites until stiff, but not dry, and fold gently but thoroughly through the mixture. Pour into a baking dish that has been buttered on the bottom only. Set in a shallow pan of hot water and bake in a 350-deree f. oven for 45 minutes to 1 hour, or until a knife inserted in the center comes out clean.

Makes 3 to 4 servings
