8 slices turkey bacon
1 medium onion; chopped
1 red pepper; chopped
2 cups egg substitute
8 flour tortillas
1 cup reduced-fat Monterey Jack cheese


Prepare bacon in a large, non-stick frying pan. Drain and crumble cooked bacon. In the same pan, cook onion and pepper until tender, approximately 5-minutes. Remove from pan and set aside. Cook egg substitute over medium heat without stirring until eggs begin to set. Stir gently and allow to set until cooked. Add bacon and vegetables to eggs. Spoon mixture onto tortillas that have been heated according to packaged directions. Fold or roll tortillas and serve with one or all of the following toppings: Fat-Free Sour Cream, Salsa, Shredded Lettuce and Fresh Diced Tomatoes.
