2 tablespoons butter
1 heaping tablespoon flour
1 cup milk
1/2 teaspoon salt
3 eggs, yolks and whites beaten separately
1 cup grated cheese
pepper (spice)


Melt butter, slowly stir in sifted flour, but do not brown, add milk slowly, stirring constantly to make mixture smooth. Add salt, paprika. Remove from fire, add well beaten whites and yolks of eggs, also cheese. Pour into buttered dish, bake in 350 degree F. oven about 40 minutes. Serve immediately. 1 cup cooked ham or tuna may be added.
