1 tablespoon butter or margarine
melt butter or margarine in a saucepan. Add flour and blend, add milk and cook and stir until the resulting sauce is smooth and thickened. Pour gradually over beaten eggs, stirring constantly. Fold in cheese, green pepper and seasonings and pour into buttered custard cups. Set in a pan of hot water and bake in a 350-degree F. oven about 40 to 45 minutes, or until set. Unfold and serve with tomato or Creole sauce.
