1 1/2 cups sifted flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
6 tablespoons shortening
2 egg yolks, beaten
2 egg whites, stiffly beaten


Sift flour once, measure, add baking powder, salt and sift into a mixing bowl. Cut in shortening until the mixture resembles fine meal. Add egg yolks to milk and blend. Add to dry ingredients and stir only until flour is moistened, but not until the batter is smooth. Fold in egg whites and bake in a preheated waffle iron until steam ceases to escape from the grids.

Makes 4 waffles
