2 tablespoons butter or margarine
2 tablespoons flour
1 3/4 cups milk
salt and pepper, to taste
1 egg yolk, slightly beaten
4 hard-cooked eggs, cubed or sliced
1/2 cup sliced cooked mushrooms
1 tablespoon chopped pimiento
1 tablespoon chopped green pepper
crisp buttered toast points


Melt butter in the top of a double boiler over direct heat. Add flour and blend. Add milk and cook and stir until the resulting sauce is smooth and thickened. Season to taste with salt and pepper and place over boiling water. Add a little of the hot sauce to the beaten egg yolk, then add to remaining sauce. Add the eggs, mushrooms, pimiento and green pepper and heat to serving temperature. Do not stir more than necessary.
