Ingredients:
2 cups cooked, finely chopped, seasoned spinach
6 eggs
1 1/2 cups medium, well-seasoned white sauce
1/4 cup grated Parmesan cheese
Directions:
Combine spinach with 1/2 cup of the white sauce and spread in 6 individual
baking dishes or 1 large dish. Make a shallow indentation in the center of each
and break an egg into each one. Cover with white sauce and sprinkle with grated
cheese. Bake in a 350-degree F. oven about 15 minutes, or until the egg is set
to the desired degree of doneness.
