Heat 1 to 2 tablespoons fat in a heavy skillet until a drop of water sizzles when dropped on the surface. Break eggs into a saucer and slip into the skillet. Reduce heat and cook slowly, basting with fat as egg cooks to desired degree of doneness. Or, when eggs begin to set, add 1/2 teaspoon of hat water for each egg, cover skillet tightly and allow to cook to desired degree of doneness. (Steam bastes top of eggs as they cook.)
