2 cups sifted flour
3 teaspoons baking powder
3/4 teaspoon salt
1 egg, beaten
1 3/4 cups milk (about)
1/4 cup milted shortening


Sift flour once, measure, add baking powder and salt and sift again. Beat egg, and milk and cooled shortening and blend. Stir into dry ingredients only until the flour is moistened. Pour or ladle onto hot greased griddle, forming medium size cakes. When cakes puff and bubble, turn quickly and lightly, and brown on the second side. (Do not allow bubbles to break before turning and turn only once.) For thinner cakes, add more milk to thin the batter.

Makes 18 cakes
