Bring water 2 inches deep in a shallow pan to the boiling point. Reduce heat and hold the temperature at simmering. Break each egg into a sauce dish and slip in into the water at the surface. Cook 3 to 5 minutes, depending on the degree of firmness desired. remove with slotted or perforated pancake turner or spatula and drain.
