1 tablespoon margarine or butter
4 eggs
cup water
teaspoon dried basil leaves
teaspoon black pepper
4 ounces smoked sausage (cut lengthwise into halves and sliced)

Directions:

Cook spinach in margarine in 10-inch ovenproof skillet over medium heat 5 minutes. Meanwhile, beat eggs with water, basil, salt and pepper in medium bowl. Pour into skillet; stir briefly, then cook 1 minute. Arrange sausage on egg mixture. Broil, 4-inches from heat, about 2 minutes or until puffed and golden. To serve, cut into wedges.
