Ingredients:
1/4 cup butter or margarine
1/4 cup flour
2 cups milk
1/2 teaspoon salt
1/8 teaspoon pepper
6 hard-cooked eggs, sliced
1/2 cup sliced cooked mushrooms
1 cup chopped ham
1/4 cup chopped green pepper, if desired
buttered crumbs
Melt butter or margarine in a saucepan, and flour and blend. Add milk and
cook and stir until the resulting sauce is smooth and thickened. Add
seasonings and blend. Arrange alternate layers of eggs, mushrooms, ham and
green pepper in a buttered baking dish. Pour the hot sauce over the top
and top with buttered crumbs.
Bake in a 350-degree F. oven about 25 minutes, or until thoroughly heated and lightly browned.
Makes 6 servings
Variations:
- Cooked vegetables, flaked tuna, salmon, crab, shrimp, lobster, finnan haddie or other cooked flaked fish may
be substituted for the ham in the above recipe.
