6 egg yolks
6 tablespoons sugar
10 tablespoons ground almonds
6 egg whites
3 crackers, rolled fine
1 teaspoon (scant) baking powder
1 teaspoon vanilla or almond extract


Beat egg yolks, stir in sugar, beat, add remaining ingredients, fold in stiffly beaten whites. Bake in in 2 layers. When cold cover with coconut dessert filling or whipped cream. Sprinkle with sliced blanched almonds.
