Angel Food Cake
Ingredients:
1 cup sifted cake flour
1 1/2 cups sugar
1/2 teaspoon salt
1 1/4 cups egg whites
1 teaspoon cream of tartar
3/4 teaspoon vanilla
1/4 teaspoon extract of almond
Directions:
Sift flour once, measure, add half the sugar and sift together 4 times. Add salt to egg whites and beat until foamy, then add cream of tartar and continue to beat until a spatula will leave a faint line when drawn through the mixture. Beat in the remaining sugar, a tablespoon at a time, continuing to beat until all has been added and until the mixture will hold in soft peaks.
Add flavoring and blend. Sift flour gradually over the mixture, folding it in gently but thoroughly after each addition. Pour into an ungreased tube pan (about 10 inches) and bake in a 350 degree oven for 45 to 50minutes, or until done. Remove from the oven, invert the pan and cool for about 1 hour before removing from the pan.
