1 3/4 cups sifted cake flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup shortening
1 1/2 cups sugar
2 eggs
1/4 cup buttermilk or soured milk
1 cup mashed banana
1 teaspoon vanilla


Sift flour once, measure, and resift twice with the salt, baking powder, and baking soda. Cream shortening, add sugar gradually and cream together until light and fluffy. Add eggs, one at a time, beating well after each addition. Add dry ingredients, alternately with buttermilk, beating until smooth after each addition. Add mashed banana and vanilla and beat until batter is smooth. Pour into 2 greased 9 inch layer cake pans and bake in a 350 degree oven about 30 minutes, or until done. Cool and frost with 7 minute, butter cream, or uncooked confectioners' sugar frosting moistened with mashed banana to which a few drops of lemon juice are added.
