2 3/4 cups sifted cake flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons instant coffee
3/4 cup shortening
2 cups brown sugar, firmly packed
3 eggs
3/4 cup water
1 1/2 teaspoons vanilla


Sift flour once, measure, and resift twice with the baking powder, baking soda, coffee and salt. Cream shortening with sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Add the dry ingredients alternately with the water, beating until smooth after each addition.

Add vanilla and blend. Pour into 2 well greased 9 inch layer cake pans and bake in a 350 degree oven for about 25 to 30 minutes, or until done. Remove from the oven, remove from pans, cool and frost with sea foam frosting. Garnish with chopped walnuts or pecans.
