2 cups egg whites
1 1/2 cups well-sifted granulated sugar
1/4 teaspoon salt
1/4 cup cocoa
1 teaspoon cream of tartar
3/4 cup sifted cake flour
1 teaspoon vanilla

For small cake use 1/2 recipe. Bake in 9-in.
ungreased tube cake tin, about 35 minutes,
350 degree F. oven.


Prepare flour before beating egg whites. Sift flour several times, combine the 2, sift three times. Beat egg whites on large platter with flat wire beater. Add salt, cream of tartar, continue beating until egg whites are stiff, but not dry. Fold in stiffed sugar, vanilla, then flour. Fold carefully into ungreased angel food tin, bake in mandate oven 50 to 55 minutes. Remove from oven, invert pan until cake is cold.
