3/4 cup sifted cake flour
1 1/4 cups sifted sugar
1/4 cup cocoa
1/2 teaspoon salt
1 1/2 cups egg whites (about12)
1 teaspoon cream of tartar
1 teaspoon vanilla


Sift flour once, measure, then resift 3 times with 1/2 cup of the sugar. Sift 3/4 cup of the sugar with the cocoa 4 times. Add salt to egg whites and beat until foamy. Add cream of tartar and continue to beat until a spatula will leave a faint line when drawn through the mixture. Add sugar-cocoa mixture, a tablespoon at a time and continue to beat until all has been added and the mixture will hold in soft peaks. Add flavoring and blend. Fold in the flour-sugar mixture, a small amount at a time, blending gently but thoroughly. Pour into an ungreased 10 inch tube pan and bake in a 350 degree oven for about 45 to 50 minutes, or until done. Remove from the oven, invert the pan and allow to cool about 1 hour before removing from the pan.
