1/4 cup cocoa
2/3 cup milk
2 cups granulated sugar
1/8 teaspoon salt
1/8 teaspoon cream of tartar
1 tablespoon light corn syrup
1 tablespoon butter
1/2 teaspoon vanilla


Beat the cocoa and milk over low heat, stirring constantly. Add the sugar, salt and corn syrup, stir until mixture boils. Cook to a soft ball when tested in cold water or 232 degrees F., using candy thermometer. Remove from fire, add butter and vanilla. Cool mixture to lukewarm and beat until mixture thickens, about 10 minutes. Use rotary beater.
