2 1/4 cups sifted cake flour
1/2 teaspoon salt
2 1/2 teaspoons baking powder
3/4 cup shortening
1 cup sugar
3 egg yolks
1 teaspoon vanilla
1 cup milk
3 egg whites
1/2 cup sugar


Sift flour once, measure, and resift twice with the baking powder and salt. Cream shortening, add the 1 cup of sugar gradually and cream together until light and fluffy. Add the egg yolks, one at a time, beating well after each addition. Add vanilla and blend.

Add sifted dry ingredients to creamed mixture alternately with the milk, beating until smooth after each addition. Beat egg whites until frothy throughout, then add remaining 1/2 cup of sugar gradually and continue to beat until mixture will stand in peaks. Beat into the batter gently but thoroughly until blended.

Pour into 2 greased 9 inch layer cake pans and bake in a 350 degree oven 25 to 30 minutes, or until a cake tester inserted in the middle comes out clean. Remove from the oven, allow to stand 5 minutes, then remove from pans on wire cake racks to cool. Frost with any desired frosting.
