3 cups sifted cake flour
4 teaspoons baking powder
1/2 teaspoon salt
3/4 cup shortening
1 1/2 cups sugar
1 teaspoon lemon extract
4 egg whites
1 cup milk
1 teaspoon grated orange rind or citron


Mix and sift flour, baking powder, and salt. Cream shortening until soft and smooth; gradually add sugar, creaming until very fluffy; add flavoring. Beat in thoroughly 1 egg white at a time. Add flour alternately with milk, beating until smooth after each addition. Turn into well greased tube or loaf pan and bake in moderate oven, 350 degrees F, 1 hour. Split cake, use lemon dessert filling. Cover with seven minute frosting.
