Ingredients:

2 1/2 cups sifted flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 pound mincemeat
1 cup raisins
1 cup chopped nuts
1/2 cup shortening
1 cup sugar
2 eggs
1 teaspoon vanilla

Directions:

Sift the flour once, measure, add the baking powder, baking soda and salt and sift again. Combine the mincemeat, raisins and nuts. Cream shortening and sugar until light and fluffy, add eggs, one at a time and beat well after each addition. Add vanilla and blend. Add flour mixture and mix until the batter is smooth, then beat in mincemeat mixture.

Pour into a lightly greased tube pan which has been lined with heavy buttered paper and bake in a 325 degree oven for about 1 1/2 hours, or until done. Remove from the oven, cool in pan, remove paper and store until ready to use.
