1 cup sugar
2 egg whites
1/4 teaspoon cream of tartar
3 tablespoons cold water
1/4 teaspoon vanilla


Place sugar, unbeaten whites, cream of tartar, and water in top of double boiler. Use rotary beater wisk briskly while cooking beater. Place over vigorously boiling water but do not let water touch upper pan. Beat until mixture will stand in a peak on beater. Remove from fire. Beat. Add vanilla.
