3/4 cup sifted cake flour
1 teaspoon baking flour
1/4 teaspoon salt
4 eggs
3/4 cup sifted sugar
1 teaspoon vanilla


Sift the flour once and measure. Break eggs into a round bottomed bowl, add baking powder and salt and place in another smaller bowl of hot water. Beat with a rotary beater until frothy, then add sugar gradually and continue to beat until thick and lemon colored.

Remove bowl from hot water and fold in flour and vanilla. Pour into a 10x15 jelly roll pan which has been lightly greased and lined with heavy waxed paper which has also been lightly greased. Bake in a 400 degree oven 12 to 13 minutes, or until done.

Remove from oven, quickly cut off crisp edges and turn at once onto a tea towel sprinkled with confectioners' sugar. Remove the waxed paper and roll up gently on a tube of paper which has been covered with waxed paper. When almost cool, unroll, spread with jelly and reroll, placing roll with end down on tray to seal. Sprinkle with confectioners' sugar or frost with a thin uncooked confectioners' sugar frosting.
