6 eggs
1/2 cup strained pineapple juice
1 teaspoon lemon extract
1 1/2 cups sugar
1 1/2 cups sifted pastry flour
2 teaspoons baking powder
1/4 teaspoon salt


Beat egg yolks with rotary beater, add liquid, flavoring and sugar and beat well. Sift flour, baking powder, and salt together 4 times, stir into first mixture. Fold in stiffly beaten egg whites. Bake in an ungreased angel food cake tin about 50 minutes in 350 degree F. oven. Use pineapple or orange frosting.
