1 cup pastry flour
1 teaspoon cream of tartar
1/4 teaspoon salt
1 1/3 cups granulated sugar
1/3 cup water
1 teaspoon vanilla
7 egg whites
7 egg yolks
pinch salt


Sift flour once, measure. Add cream of tartar, salt, sift with flour 4 times. Boil sugar and water without stirring to a soft ball. Pour hot syrup over stiffly beaten egg yolks. Slowly fold in flour. Pour into angel tin, do not grease. Bake about 50 minutes in moderate oven. Use boiled white frosting and shredded coconut.
