2 1/2 cups sifted cake flour
1/2 teaspoon baking soda
2 teaspoons baking powder
3/4 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon cloves
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1/2 cup shortening
1 1/4 cups brown sugar, firmly packed
2 eggs
1 cup buttermilk or soured milk


Sift flour once, measure, add baking soda, baking powder, salt and spices and sift together twice. Cream shortening with brown sugar until the mixture is light and fluffy. Add the eggs, one at a time, beating well after each addition. Add the sifted dry ingredients alternately with the buttermilk, beating until smooth after each addition. Pour batter in a greased 10x10x2 inch square pan or into 2 9 inch layer pans and bake in a 350 degree oven for about 45 to 50 minutes, or until done (or 25 to 30 minutes for layer pans). Cool and frost with penuche nut frosting. Or top with broiled on frosting.
