1 cup sifted cake flour
1/2 teaspoon salt
5 egg yolks, beaten until thick and lemon colored
5 egg whites
1 1/2 tablespoons lemon juice
1/2 teaspoon grated lemon rind
1 cup sifted sugar


Sift flour once, measure, add salt and sift together 4 times. Add lemon rind and juice to beaten egg yolks and blend well. Beat egg whites until frothy throughout, then beat in sugar, a small amount at a time until the mixture will stand in soft peaks. Fold in egg yolks. Fold in flour, a small amount at a time. Bake in an ungreased tube pan in a 350 degree oven about 45 or 50 minutes, or until done. Remove from the oven and invert 1 hour, or until the cake is cool, then remove from the pan.
