1 cup sifted cake flour
Sift flour once, measure and resift twice with the salt. Beat the egg yolks with a roatry beater until thick and lemon colored. Beat the whites until foamy, then add the cream of tartar and beat until almost stiff. Add the sugar gradually and beat until the mixture holds in soft peaks. Fold in egg yolks and flavoring. Fold in flour gently but thoroughly. Pour into an ungreased 10 inch tube pan and bake in a 350 degree oven for about 45 to 50 minutes, or until done. Remove from the oven and invert for 1 hour, or until cool. Frost with lemon or orange flavored frosting.
