Apricot Explosions
Ingredients:
1 cup chopped walnuts
3 1/2 cups all-purpose flour
3/4 cup white sugar
2 teaspoons baking powder
2 eggs
1 cup shortening
1 cup apricot preserves
2 teaspoons ground cinnamon
Directions:
In large mixing bowl, combine sugar, eggs, and shortening together by hand. Add flour and baking powder; mix well. Divide dough in half. Spread half of dough in 10 x 15 inch pan. Spread preserves over dough. Sprinkle walnuts on top and then sprinkle cinnamon on top Grate second half of dough on top (crumble). Press down gently. Bake for 1/2 hour at 350 degrees F (175 degrees C). Cut into squares when cool.
